Having a completely open heart when you're young is acceptable as youth can handle it being broken, since it has self-regenerative properties. The elder heart has succumbed to much tumult and pain, so naturally by the passage of time it has become hardened, which is a natural defence and allows it to be self-restrained, calculating, and quite possibly a bit more cynical.
